Using an Instant Pot to cook chicken can save you time and energy while still producing delicious and juicy results. Here are three easy and tasty chicken Instant Pot recipes:

 

Instant Pot Chicken and Rice

 Ingredients:

– 1.5 pounds boneless, skinless chicken breasts

– 1 cup white rice

– 1 cup chicken broth

– 1/2 onion, diced

– 2 cloves garlic, minced

– 1 teaspoon dried thyme

– 1 teaspoon dried oregano

– Salt and pepper to taste

– 2 tablespoons butter

 

Instructions:

 

  1. Add the chicken, rice, chicken broth, onion, garlic, thyme, oregano, salt, and pepper to the Instant Pot.
  2. Close the lid and set the Instant Pot to Manual, High Pressure for 8 minutes.
  3. Once done, allow the pressure to release naturally for 5 minutes before doing a quick release.
  4. Remove the chicken from the pot and shred it.
  5. Add the butter to the pot and stir until melted and combined.
  6. Return the shredded chicken to the pot and stir everything together.
  7. Serve and enjoy!

 

Instant Pot Lemon Garlic Chicken

 Ingredients:

– 1.5 pounds boneless, skinless chicken breasts

– 1/2 cup chicken broth

– 1/4 cup lemon juice

– 3 cloves garlic, minced

– 1 teaspoon dried thyme

– Salt and pepper to taste

– 2 tablespoons butter

 

Instructions:

 
  1. Add the chicken, chicken broth, lemon juice, garlic, thyme, salt, and pepper to the Instant Pot.
  2. Close the lid and set the Instant Pot to Manual, High Pressure for 8 minutes.
  3. Once done, allow the pressure to release naturally for 5 minutes before doing a quick release.
  4. Remove the chicken from the pot and set it aside.
  5. Add the butter to the pot and stir until melted and combined.
  6. Serve the chicken with the buttery sauce on top.
  7. Enjoy!
 

Instant Pot Chicken Fajitas

 Ingredients:

– 1.5 pounds boneless, skinless chicken breasts, sliced

– 2 bell peppers, sliced

1 onion, sliced

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon paprika

– Salt and pepper to taste

1/4 cup chicken broth

 

Instructions:

 

  1. Add the chicken, bell peppers, onion, chili powder, cumin, paprika, salt, and pepper to the Instant Pot.
  2. Pour the chicken broth over everything.
  3. Close the lid and set the Instant Pot to Manual, High Pressure for 8 minutes.
  4. Once done, allow the pressure to release naturally for 5 minutes before doing a quick release.
  5. Serve the chicken and veggies in tortillas or on top of rice.
