Birria is a traditional Mexican stew made with goat or beef, and is often served in tacos or as a soup. The key to this flavorful dish is the use of dried chilies and spices. Here is a recipe for birria:
Birria Ingredients:
3 lbs beef chuck roast or goat meat
6 dried guajillo chiles
4 dried ancho chiles
4 cloves garlic, minced
1 tablespoon cumin
1 tablespoon dried oregano
1 teaspoon ground cloves
1 teaspoon ground cinnamon
4 cups beef broth
1/2 cup white vinegar
Salt and pepper to taste
Corn tortillas, chopped onions, chopped cilantro, and lime wedges for serving
Birria Instructions:
- Preheat the oven to 350 degrees F.
- Toast the dried chiles in a dry skillet over medium heat until fragrant, about 2-3 minutes.
- Remove the stems and seeds from the chiles and place them in a blender.
- Add the garlic, cumin, oregano, cloves, cinnamon, beef broth, vinegar, salt, and pepper to the blender and blend until smooth.
- Trim any excess fat from the beef or goat meat and cut it into large chunks.
- Pour the chile mixture over the meat in a large Dutch oven or oven-safe pot.
- Cover the pot and place it in the preheated oven.
- Bake for 3-4 hours, or until the meat is tender and falls apart easily.
- Remove the pot from the oven and shred the meat with a fork.
- Serve the birria hot in bowls, garnished with chopped onions, chopped cilantro, and lime wedges.
- Alternatively, serve the birria in tacos with warm corn tortillas.
- Enjoy your delicious and flavorful birria!
